Palace Diner: A Timeless Staple, Reimagined for the Future






Palace Diner, which is located in the heart of Biddeford and the oldest diner in the city, a staple for Biddeford citizens and has welcomed loyal customers since 1927. The shell of the diner, which is one of two Pollard cars remaining in America, was originally built in Lowell, Massachusetts in 1927, which creates a vintage-timeless atmosphere. The owners share a passion for classy food, reflecting in their menu and have big dreams on where they want to take their restaurant.
“We are truly proud of it all!” states Conley when asked about their inspiration on the menu. They have worked hard to create an idealized version of each dish on the menu. They have curated a menu that focuses energy on maintaining quality and consistency. “favorites seem to be our Deluxe breakfast sandwich, our chicken sandwich, our tuna melt, and our French toast.” according to Conley. As dishes continue to change, shortcomings arise for the restaurant, they need to make renovations from year to year but at what cost? Do these renovations ruin the historic value of the establishment?
The management of the Palace Diner has seen its share of owners, each leaving a distinct mark on its legacy. For the current owners, stepping into a role that has been filled by many before them comes with a profound sense of responsibility. Chad Conley and Greg Mitchell have been owners of Palace Diner since 2014. “We feel a responsibility to keep things going in some ways, and to be true to ourselves and to our sense of what a changing Biddeford is looking for in its diner.” says Conley.
As discussions arise about whether the new owners are “ruining” the historic value of the diner, it becomes clear that their intention is to strike a balance. They are not simply preserving a snapshot of the past but are actively curating a diner that represents history and its new and evolving identity. “This evolution is part of its charm, it’s not stuck as the version of itself that it was when it opened in 1927. There are elements from the 50s and 60s, from the 80s and 90s.” says Conley. In doing so, they strive to create a space that resonates with both long-time patrons and new visitors, ensuring that the Palace Diner remains a beloved fixture in the community for years to come.
As they continue to work towards the best version of the diner they can envision they strive to continue to ensure that the diner can be the idealized daily breakfast and lunch destination it has become, for Biddeford and for people passing through. They look forward to hearing everyone’s stories and memories of growing up coming here and plan to continue making it a place for all.
